Chicken with Indian flavors




Chicke drumstick preferably fresh c 825 gr
2 chopped onions
4 minced garlic cloves
about 2 tablespoons finely chopped fresh ginger
A live Spanish-chili pepper, finely chopped
1 can of crushed tomatoes
3 cups chicken broth
2 star anise
2 whole cinnamon sticks
1 tablespoon cumin
2 tablespoons curry powder
2 x bay leaves
peel and juice of one lemon
salt and sugar


Place the chicken in a bowl, pour the lemon juice, peel and salt. Rub the chicken with the spices and let it be for about 15 min.

Fry the onion, garlic, ginger and chilli in oil. Pour the curry and cumin, stir and add the chicken, fry until chicken is brown. Pour in broth, tomatoes, cinnamon, star anise, and bay leaf. Let simmer about 30 minutes. Salt and sugar if needed. Serve with basmati rice.
